Bourbon Injected Ghost Wings

I like it HOT! Yeah, you know me by now... I am the king of spicy hot BBQ food. So I wanted to share my favorite Ghost wings recipe with you all! This sauce pops in your mouth and makes you want to dance. You can serve something on the side to break the heat - like lemon zest cornbread with a drizzle of honey on top. It gives you something fresh to dig into. You'll need it!


Dry rub:
9 chicken wings
2 tsp coarse black pepper
8 tsp chicken rub
3 tsp sweet and smoky rub
1 tsp cayenne pepper
1.5 tsp dry parsley
Rub the seasoning well into the chicken.

Sauce:
6 tsp Hickory Brown sugar BBQ sauce
3/4 cup Frank's Buffalo style red hot sauce
A few drops of ghost pepper sauce (I personally don't like to add more than three, it gets very hot!)
1 shot Bourbon whiskey - whatever kind you prefer
1.5 tsp mesquite liquid smoke
Mix together well.

Pour the sauce into a tall glass. It makes it much easier to reach it with the injector.
Fill up your injector with the sauce. Poke it into each chicken wing, try to avoid the bone. Make sure the injector does not poke through the skin on the other side - it'll get messy! Fill it up until you see the wing plump up without overflowing. Don't worry if some of it leaks out, as long as you got some of the sauce in there.

Throw the chicken wings on the BBQ on 350 F.
Brush on a layer of Frank's Buffalo style red hot sauce.
After 15 minutes - flip the wings. Brush on a layer of the red hot sauce.
After 15 minutes - flip the wings again. Brush on a layer of the red hot sauce.
After 15 minutes - flip the wings again. Brush on a layer of the red hot sauce.

Take it off the BBQ after about 45 minutes and ENJOY!
