Mandarin Citrus Chicken with Green Onions and Rice

This recipe has a lot of good elements to it that I thoroughly enjoy! It's citrusy, sweet and garlicy.  Few things goes as well together with chicken as citrus fruit. For this one I use mandarin and some of its juice! But you can use lemon, orange or lime. I absolutely love the salty soy sauce clashing with the sweet honey mandarin. It gives you the best of both worlds.


Dry rub:
6 chicken drumsticks
2.5 tsp cayenne pepper
2 tsp coarse black pepper
1 tbsp garlic salt
2.5 tsp salt
2 tsp dry parsley
Make sure that all of the chicken drumsticks are covered in the seasoning to seal in those flavors.
BBQ on 400 F.

Marinade glaze:
2 cups mandarin oranges + half of the juice
1 cup Jack Daniel's Hickory BBQ sauce
1/2 cup honey - I used organic Orange Blossom but you can use your favorite
1 shot soy sauce
Mix it all together in a blender until it looks like a smooth juice!

After 15 minutes of the chicken cooking on the BBQ - brush on a layer of your marinade glaze.
After another 10 minutes - add another layer of the marinade glaze.
After 10 more minutes - add another layer of the marinade glaze.
Let the chicken cook on the BBQ for another 5 minutes. All done!

Side dish:
Cook some rice - most people know how to do this!
Cut up some green onions and mix in with the rice.
Drizzle the marinade glaze on the rice as a flavor enhancer.
Serve the rice on a plate with the chicken drumsticks on the side. Drizzle the marinade glaze around it for a nice presentation!
