If anything compliments chicken - it's rosemary! I have made many variations of rosemary chicken, but let's face it... these bite size ones are perfect for parties and as finger food!
4 chicken filets
4 cups flour
2 cups rosemary
1 cup creole seasoning mix
3 tsp black pepper
3 tsp salt
How to do it:
Cut up the chicken filets in bite size pieces.
Stir the eggs around in a separate bowl, this will be your egg wash.
In another bowl - mix together the flour, rosemary, creole seasoning mix, black pepper and salt.
Dunk one piece of chicken at a time in the flour mix, then dip it in the egg wash, roll it in the flour mix one more time. Then put it on a plate/platter. Make sure that the chicken bites are not laying too close to one another, because then you risk ruining the coating.
Turn your deep fryer on 365 degrees. I personally like to use peanut oil but you choose whichever one is your favorite. Put the chicken straight into the oil, with the basket already down in the oil, that way the chicken does not risk getting stuck together. Use tongs so you do not get too close to the hot oil! Fry for 7 minutes. And you are done!!
